Recipe Sunday: Old Fashioned Potato Salad

This afternoon our friends Sally and Scott, our bee mentors, are coming over to help us do the final preparation for the bee’s arrival on June 4th.  We are going to paint boxes, make the inserts and assemble the hives, sip wine and have a barbecue together.  This morning we made this potato salad for the barbecue:

Old Fashioned Potato Salad

Ingredients

 5 lb bag of potatoes

6 duck eggs

1 cup chopped celery

2 diced red onions

1/2 cup sweet relish

1/4 teaspoon garlic

1 teaspoon salt

3 tablespoons of your preferred mustard (I like ones with the whole mustard seed)

ground pepper to taste

1/2 cup mayonnaise

Directions

1. Cook the potatoes until tender, drain, cool and chop.

2. Boil the eggs, cool, peel and chop.

3. In a large bowl, combine all the ingredients.  Mix together well and refrigerate until chilled.
